Research interests & activities

My primary research area is in methods for objective evaluation of carcass and meat quality in beef, lamb and venison. The amount meat and co-products, the distribution throughout the carcass, and intrinsic properties that influence value of meat and co-products per kilo are central research themes.

I am part of the Food and Bio-based Products group and the Food Assurance and Meat Quality team. If you would like to know more about our meat science or food quality and safety research work, or have another enquiry, please feel free to contact me on 07 838 5152 or 021 289 9063
